Banana Pancakes

Ingredients

  • 1 medium banana
  • 2 large eggs (or 1 large egg and 2 egg whites)
  • ¼ cup rolled oats (gluten-free if you’re avoiding gluten)
  • ¼ tsp vanilla
  • ¼ tsp ground cinnamon

Instructions

  • Combine all ingredients in a blender and process until smooth.
  • Cook on a griddle (on low temp) as you would any other pancake
