Gingerbread Cake

Ingredients

  • 1 ¼ cup Kamut flour
  • ½ cup whole wheat pastry flour
  • ½ cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp sea salt
  • 1 tsp nutmeg
  • 1 tsp aniseed
  • 1 tsp allspice
  • ½ tsp freshly ground black pepper
  • 1 tsp cinnamon
  • 1 tsp espresso powder
  • 1 tsp ground ginger
  • ¼ cup coconut oil melted, but not hot
  • 1 cup Greek yogurt
  • ¼ cup natural sugar (Sugar in the Raw or Turbinado)
  • ½ cup dark brown sugar
  • ½ cup unsweetened apple sauce
  • ¼ cup unsulphured blackstrap molasses
  • 1 egg (large or XL)
  • 2 Tbsp grated fresh ginger

Instructions

  • Preheat the oven to 350° F
  • In a large bowl, combine all the dry ingredients, stirring gently with a whisk to ensure the spices are well mixed.
  • In a separate bowl, whisk together the melted butter, yogurt, brown sugar, apple sauce, molasses, egg, and grated ginger. Add this to the dry ingredients and fold to combine.
  • Pour the batter into a greased and lined 9" round cake pan. Bake for 45-50 minutes or until a skewer inserted into the center of the cake comes out clean
