Egg Skillet - with Spiced Sweet Potato, Sausage + Herbed Cheese


  • 2 tsp coconut oil (or olive oil), divided
  • 1 small onion, diced
  • 1 tsp minced garlic
  • ½ lb breakfast sausage
  • 1 Tbsp smoked paprika
  • 1 tsp turmeric
  • ¼ tsp salt
  • ½ cup cup water
  • 2 - 3 cups sweet potato, cut into ¼" pieces (wedges, cubes, etc .. )
  • 2 - 3 eggs (large or XL)
  • 1 - 2 oz Herbed Laughing Cow cheese (or goat cheese)


  • Turn the broiler on your oven to high
  • Cook Sausage
  • Preheat a skillet over medium heat and add 1 tsp coconut oil.
  • Add onion, cooking until it's translucent, 2-3 minutes. Add garlic and continually stir for 30 seconds, or until fragrant
  • Add sausage and stir for 5-6 minutes, or until browned. Set Aside
  • Cook Sweet Potatoes
  • Combine water, turmeric, paprika, and salt in a small bowl
  • Preheat a 12" cast-iron skillet over medium heat and add 1 tsp coconut oil, along with the water, turmeric, paprika, and salt mix
  • Carefully stir in the sweet potatoes, enough to fill the skillet. Cover with lid and let them cook until almost tender, 6-8 minutes.
  • Combine and Broil
  • Stir cooked sausage into the skillet with the sweet potatoes
  • Create a 3 or 4 small wells in the center and crack an egg into each well. Sprinkle crumbled cheese on top.
  • Place your skillet six inches under your broiler and cook to your liking
  • Remove from the oven and serve right from the pan. Serve with a sprinkle of cilantro.
