Western Casserole

Ingredients

  • 1 ¼ lb ground beef
  • 1 green or red pepper, chopped
  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 8 oz mushrooms, coarsely chopped
  • 2 - 3 cloves garlic
  • 1 Tbsp chili powder mild to spicy, depending on your heat tolerance
  • 1 (15 oz) can diced fire-roasted tomatoes
  • 1 (15 oz) can kidney beans
  • 1 (15 oz) can black beans
  • 2 cups brown rice, cooked
  • sliced black olives (optional, for topping)
  • shredded cheese, for topping

Instructions

  • Cook rice according to directions
  • Saute onions, celery, pepper, mushrooms, chili powder, and garlic until the vegetables are being to get soft
  • Add ground beef and cook until browned
  • Combine the mix along with the tomatoes, beans, and rice in a baking dish.
  • Top with cheese and olives
  • Cook 30-40 minutes until the cheese is bubbly and slightly brown on the top
