Pumpkin Pancakes

Ingredients

  • Dry Ingredients
  • 2 ¼ cups whole wheat pastry flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • cup natural sugar (Sugar in the Raw or Turbinado) - brown sugar is great too
  • pinch of sea salt
  • 1 ½ tsp cinnamon
  • 1 ½ tsp nutmeg
  • pinch of cloves

  • Wet Ingredients
  • 2 cup buttermilk
  • 2 eggs, lightly beaten (large or XL)
  • 2 Tbsp butter, melted
  • cup pumpkin puree
  • 2 big handfuls walnuts, chopped

  • Maple Yogurt Topping
  • ¼ cup Greek yogurt
  • ½ Tbsp maple syrup
  • ½ tsp vanilla
  • ¼ tsp cinnamon

  • Optional Toppings
  • pecans or walnuts, toasted
  • fruit of your choice
  • maple syrup

Instructions

  • Whisk together the dry ingredients, and set aside
  • Whisk together the wet ingredients until thoroughly combined
  • Using a spatula, mix the wet ingredients into the dry ingredients. (For tender pancakes, use a light hand while gently folding the batter together with the spatula)
  • Let the batter sit for about 10 minutes
  • Use your favorite pancake cooking method, a griddle or pan on the stove
  • Top with your favorites - maple yogurt, nuts, fruit ..
