Blackened Chicken Salad

Ingredients

  • Blackened Seasoning Mix
  • 1 ½ Tbsp paprika
  • 1 Tbsp garlic powder
  • 1 Tbsp onion powder
  • 1 Tbsp ground dried thyme
  • 1 tsp ground black pepper
  • ½ tsp cayenne pepper
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • (You'll use about 2 Tbsp of the seasoning mix for the recipe. In total it makes ~ ¼ cup)

  • Dressing
  • ¾ cup light mayonnaise (or Greek yogurt)
  • ¼ cup Dijon Mustard
  • ¼ cup cider vinegar

  • Chicken Salad
  • 1 lb boneless, skinless chicken breasts, rinsed and patted dry
  • ½ red onion, diced
  • 6 scallions, diced
  • 1 large carrot, grated
  • 2 Tbsp olive oil, divided (or coconut oil)

Instructions

  • Blackened Seasoning Mix
  • Mix all blackening seasoning ingredients together and set aside in a small bowl.
  • (Makes ~ ¼ cup)

  • Chicken
  • Preheat oven to 375° F.
  • Brush chicken breast with 1 Tbsp of extra virgin olive oil, on both sides, and season both sides with blackening seasoning.
  • Heat remaining 1 Tbsp of oil in a skillet. Cook chicken on each side for 7 minutes.
  • Place in preheated oven to finish cooking for 15 minutes. Allow to cool.
  • Dice the chicken and set aside, in a large bowl

  • Dressing
  • In a small bowl, combine the mayonnaise (or Greek yogurt, if using), apple cider vinegar and Dijon mustard, set aside

  • Blackened Chicken Salad
  • Combine the diced chicken, red onions, grated carrot, and scallions.
  • Pour dressing mix over chicken mix and stir (gently) to combine. Cover and chill for a couple of hours
  • Serve atop your favorite bread, or with veggies in a wrap, or if you're avoiding bread, wrapped in big lettuce leaves
