Buckwheat and Super Seed Muesli

Ingredients

  • 2 cups buckwheat groats
  • 1 cup hemp seeds
  • 1 cup chia seeds
  • ¼ cup pumpkin seeds, coarsely chopped
  • ¼ cup sunflower seeds, coarsely chopped
  • ¼ cup shredded unsweetened coconut, optional
  • ¼ cup nuts, coarsely chopped (ex: almonds, walnuts, hazelnuts, or pecans)
  • 2 Tbsp wheat germ, optional

  • For Serving
  • nut milk
  • natural sugar, optional
  • pinch or two of cinnamon
  • fruit of choice

Instructions

  • Simply stir all the seeds and other optional ingredients together in a large mixing bowl.
  • Store at room temperature in a mason jar or airtight container until serving.

  • To make raw Muesli
  • Add 2 tablespoons - ¼ cup of the super seed cereal to any ½ cup or 1 cup nut milk (depending on desired thickness)
  • Soak for at least 20 minutes, or overnight in the fridge
  • Serve with fresh berries, a dash of cinnamon, sprinkling of coconut sugar, honey, etc

  • To make cooked Muesli
  • Add 2 tablespoons - ¼ cup of super seed cereal to about 1- 1½ cups nut milk
  • Cook over low to medium heat until tender (~ 20 minutes)
  • Serve with fresh berries, a dash of cinnamon, sprinkling of coconut sugar, honey, etc
