Matcha Sesame Balls

Ingredients

  • 35 pitted prunes ( ~ 280 g)
  • 1 ¾ cups pistachios
  • 1 ¼ cup unsweetened coconut
  • 2 tsp vanilla extract
  • 1 Tbsp matcha powder + extra for dusting
  • ½ cup sesame seeds lightly toasted

Instructions

  • Place the pistachios, coconut, vanilla, matcha and half of the sesame seeds in a food processor and process, scraping down the sides, for 2-3 minutes, or until the mix comes together
  • Roll tablespoons of the mix into balls
  • Place the remaining sesame seeds on a tray and dust the seeds with extra matcha to coat
  • Roll the balls in the sesame mix, pressing to secure
