Preheat oven to 325°F
In a medium-sized bowl, add the eggs and vanilla and whisk until combined. Set aside.
Add the nut butter and combine
Add natural sugar, fine grain sea salt, and baking soda. Combine. (Note: The dough will be very thick)
Add the nuts if using, along with a little over half of the chopped chocolate, and combine.
Press the dough into a parchment-lined 8×8" pan (or something equivalent)
Sprinkle the remaining chocolate pieces over the top and press each piece slightly into the dough. Sprinkle with a pinch of flaky sea salt and place in the oven.
Bake for 25-30 minutes until the blondies are golden brown. Remove from the oven and allow them to cool in the pan completely before cutting
