Veggies
In a large frying pan over medium-high heat, heat a glug of olive oil
Add the veggies and cook, stirring occasionally, until they're tender, but not mushy (~ 5 minutes)
Add the spinach and toss until wilted (~ 5 minutes)
Egg Bake
Preheat oven to 350° F
Prepare a 9x13" baking dish
In a large bowl whisk together the eggs, cottage cheese, flour, baking soda, a strong pinch of salt, and a couple of grinds of black pepper
Add the shredded cheese, sauteed veggies, and combine
Pour the egg/veggies mix into the prepared baking dish.
Bake until the eggs are completely set (~ 1 hour)
