Peanut Butter Buckwheat Balls

Ingredients

  • Peanut Butter Balls
  • 2 Tbsp peanut butter
  • 1 cup almonds
  • ¾ cup salted peanuts
  • ¼ cup buckwheat
  • 2 Tbsp flax seeds
  • 20 fresh dates, pitted ( ~ 300 grams)
  • 2 tsp vanilla extract
  • 150 grams 70% dark chocolate, melted

  • Buckwheat Crumb
  • cup buckwheat
  • 2 Tbsp flax seeds
  • cup puffed amaranth
  • 2 Tbsp maple syrup

Instructions

  • Buckwheat Crumb
  • Preheat oven to 350° F
  • Place the buckwheat, flax seeds, amaranth, on a lined baking tray. Drizzle with maple syrup and toss to combine
  • Cook for 10–15 minutes or until golden. Set aside to cool. Break up into crumbs and set aside.

  • Peanut Butter Balls
  • To the bowl of your food processor, add the peanut butter, almonds, peanuts, buckwheat, flax seeds, dates, and vanilla. Process for 2-3 minutes or until the mix comes together.
  • Roll tablespoons of the mix into balls
  • Working one at a time, dip a ball into the melted chocolate and dip half into the buckwheat crumb
  • Place on a tray lined with non-stick baking paper
  • Refrigerate for 20 minutes to set
