Chocolatey Caramel Sticky Date Cookies


  • 1 ½ cups (360 g) firmly packed chopped pitted fresh dates
  • ½ cup brown sugar
  • 125 g unsalted butter or coconut oil
  • 1 tsp baking soda
  • 1 cup oat flour (the original called for spelt flour)
  • 1 cup oats (the original called for spelt flakes)
  • 1 egg
  • 1 tsp ground cinnamon
  • 1 tsp vanilla
  • chocolate, for drizzling


  • Preheat oven to 325° F
  • In a saucepan over medium heat, add the dates, sugar, and butter. Stir until the butter has melted and the dates are soft
  • Off-heat, add the baking soda, stir to combine, and set aside to cool
  • In a large bowl, add the flour, oats, egg, cinnamon, and vanilla. Add the date mix and combine
  • Divide and shape the mix into balls that are about 2 tablespoons in size, flatten slightly and place them on lined baking sheets
  • Bake for 12-14 minutes, or until golden
  • When cool, top with a drizzle of melted chocolate
