A Very Egg-ceptional Veggie Bake

Ingredients
  • Veggies
  • 8 ounces mushrooms, sliced
  • 2 bell peppers (any combo or red, yellow, orange, or green), diced
  • 2 cups small potatoes (purple, red, or white), diced
  • 1 medium zucchini, diced
  • 1 small onion, diced
  • 5-6 oz spinach
  • Egg Bake
  • 12 eggs, beaten
  • 2 cups cottage cheese (16 oz container)
  • 4 cups shredded cheese
  • ½ cup flour (I've use spelt, oat, and whole wheat pastry flours)
  • 1 tsp baking soda
  • fine grain sea salt
  • freshly ground black pepper
Instructions
  1. Veggies
  2. In a large frying pan over medium-high heat, heat a glug of olive oil
  3. Add the veggies and cook, stirring occasionally, until they're tender, but not mushy (~ 5 minutes)
  4. Add the spinach and toss until wilted (~ 5 minutes)
  5. Egg Bake
  6. Preheat oven to 350 degrees F
  7. Prepare a 9x13 inch baking dish
  8. In a large bowl whisk together the eggs, cottage cheese, flour, baking soda, a strong pinch of salt, and a couple of grinds of black pepper
  9. Add the shredded cheese, sauteed veggies, and combine
  10. Pour the egg/veggies mix into the prepared baking dish.
  11. Bake until the eggs are completely set (~ 1 hour)
Notes
Make ahead: The casserole can be assembled and chilled overnight before baking. It can also be frozen unbaked. Cover tightly and freeze for up to 3 months. Thaw overnight in the refrigerator, then <g class="gr_ gr_139 gr-alert gr_gramm gr_inline_cards gr_disable_anim_appear Grammar multiReplace" id="139" data-gr-id="139">proceed</g> with baking as instructed.
