General Tso’s Chicken

  • 1½ pounds boneless, skinless chicken breasts, cut into 1-inch chunks
  • ¼ cup flour
  • 2 large eggs, beaten
  • 2 cups crushed Corn Flakes
  • Sauce
  • 1½ cups chicken broth
  • ¼ cup hoisin sauce
  • ¼ cup rice vinegar
  • 3 Tbsp reduced sodium soy sauce
  • 3 Tbsp brown sugar, packed
  • 2 Tbsp cornstarch (or arrowroot powder)
  1. Preheat oven to 450 degrees F.
  2. Coat a cooling rack with nonstick spray and place on a baking sheet; set aside.
  3. Working in batches, dredge chicken in flour, dip into eggs, then dredge in crushed Corn Flakes, pressing to coat.
  4. Place onto prepared baking sheet and coat with nonstick spray.
  5. Place into oven and bake until golden brown and crisp, about 13-15 minutes.
  6. In a large saucepan over medium-high heat, combine chicken broth, hoisin, rice vinegar, soy sauce, brown sugar, and cornstarch until thickened, about 1-2 minutes.
  7. Stir in chicken and gently toss to combine.
  8. Serve immediately.
I baked my chicken directly on the baking sheet because I didn’t have a wire rack. It worked fine. I’d also recommend using a blender or food processor to crush the corn flakes into very fine crumbs.
