Sesame Cookies with Nut Butter & Honey

  • ½ cup sesame seeds
  • ½ cup sunflower seeds
  • ¾ cup honey
  • ¾ cup smooth almond butter (or any nut butter if you prefer)
  • ¾ cup almond flour
  • ¼ cup unsweetened shredded coconut
  1. Pre-heat oven to 350
  2. In a medium-sized skillet over low to medium heat, melt the butter.
  3. Add the sesame and sunflower seeds and toast for a few minutes, stirring frequently to make sure they don't burn.
  4. In a small saucepan, over medium heat, add the honey and almond butter.
  5. Warm, stirring frequently until the mix is well combined and warm. until well mixed and warm.
  6. In a large bowl, combine almond flour, shredded coconut, and toasted seeds.
  7. Add the warmed honey almond butter mixture and stir until well combined
  8. (If your batter is on the runny side, set it in the refrigerator for a half an hour or so to cool)
  9. With a spoon, create tablespoon size balls of dough and spread out on a greased or parchment lined cookie sheet.
  10. With a fork, flatten each ball flat with a criss-cross pattern.
  11. Bake for 6-8 minutes (but keep an eye on them .. want to make sure the edges don't burn as honey will cook quickly)
