Overnight Oatmeal with Sweet Marinated Peaches

  • 2 Tbs. canned coconut milk or nut milk (** the original called for whole milk)
  • 2 Tbs. natural sugar such as Sugar in the Raw (** the original called for packed light brown sugar)
  • 1 tsp. pure vanilla extract
  • ¾ tsp. ground cinnamon
  • ¼ tsp. fine-grain salt
  • 1 cup steel-cut oats (** be sure to look for those labeled gluten-free if you're avoiding gluten in your diet)
  • 3 cups Sweet Marinated Peaches, drained, ¼ cup marinade reserved (** recipe above)
  • 2 oz. (1/2 cup) toasted pecans, coarsely chopped
  • For Serving (optional)
  • ½ tsp. chia seeds
  • Additional coconut milk (** the original called for heavy cream)
  1. Combine the coconut milk, natural sugar, vanilla, cinnamon, sea salt, and 4 cups water in a 4-quart saucepan over medium-high heat.
  2. Stir gently to dissolve the sugar.
  3. Bring to a boil.
  4. Stir in the oats, simmer for a minute or two, then remove the pan from the heat.
  5. Let cool at room temperature until tepid, then cover and refrigerate overnight.
  6. When ready to eat, bring the oatmeal to a simmer over medium heat and cook, stirring occasionally, until thick and the oats are tender and chewy (~ about 10 minutes)
  7. Off the heat, stir in the reserved marinade.
  8. Top with the peaches, pecans, and chia seeds, if using. Drizzle with coconut cream, if using, and serve.
