Sweet Marinated Peaches

Serves: 3 cups
  • 3 medium ripe peaches, pitted and sliced, diced, or cut into wedges
  • ⅓ cup natural cane sugar such as Sugar in the Raw or coconut sugar would be great as well (** the original recipe called for packed light brown sugar)
  • ⅓ cup off-dry (sweet) white wine (** I've used both Chandon and Pino Grigio .. though the original suggests Gew├╝rztraminer)
  • Pinch fine-grain sea salt
  • 3 Tbs. white balsamic vinegar
  • 2 tsp. fresh thyme leaves
  1. In a medium-sized bowl whisk together all of the ingredients, except the peaches.
  2. Add the peaches and gently toss
  3. Let the peaches marinate at room temperature for at least 20 minutes, and up to 24 hours. After marinading, they can be refrigerated for up to 1 day.
