Spinach & Kale Power Salad with Avocado Dressing

Ingredients
  • Salad
  • 6 cups baby spinach, washed thoroughly and rough-chopped
  • 1 handful kale, chopped
  • ¾ cup walnuts, rough chopped
  • ½ cup dried goji berries
  • ¼ cup dried cranberries
  • 2 Tbsp wheat germ
  • 2-3 segmented navel oranges
  • Avocado Dressing
  • ½ ripe avocado
  • 1 Tbsp fresh lemon juice
  • ¼ tsp Dijon mustard
  • ½ tsp coconut sugar
  • ¾ tsp fine-grain sea salt
  • ¼ cup packed fresh flat-leafed parsley leaves
  • ¼ cup olive oil
Instructions
  1. Salad
  2. Wash the greens and add to individual serving bowls.
  3. Top with all other ingredients, divided evenly amongst the bowls
  4. Serve with the dressing on the side
  5. Avocado Dressing
  6. Combine all ingredients in a blender until smooth.
  7. Pour dressing into individual glass bottles and serve with salad
