Burgers Florentine

Ingredients
  • 3 lbs spinach, frozen-chopped
  • 2 cups bread crumbs (** gluten-free if you're avoiding gluten)
  • 8 cups walnut pieces, toasted
  • ½ red onion, diced
  • ½ cup tamari
  • ¼ cup garlic, minced
  • 1.5 Tbsp basil puree
  • 8 eggs
  • ½ cup nutritional yeast, powdered
  • 8 cups cheddar cheese, shredded
Instructions
  1. Thaw spinach, drain and wring out excess water.
  2. Combine bread crumbs, walnuts, onions, tamari, garlic, basil, egg, and yeast. Blend thoroughly in a blender. Place ingredients in a large bowl, add spinach and cheese and mix thoroughly.
  3. Using a 4-ounce scoop, scoop mix into a scoop, level, and place on parchment– lined sheet pans. Press lightly to form patties.
  4. Bake 15–20 minutes, until burgers begin to brown on the edges.
