Healthy Protein Cocoa Puffs

  • 1 cup oat flour
  • ¼ cup of cocoa powder (** see notes in the recipe .. I've had success with chocolate protein powder and cacao powder as well)
  • ¼ cup of almond meal
  • ½ tsp sea
  • 1 XL egg white
  • 1 tsp vanilla
  • ¼ cup honey (** see notes above .. may need to add a bit more if using protein or cacao powder)
  • 1 Tbsp coconut oil (** or greek yogurt)
  1. In the bowl of a stand mixer add all of the ingredients and mix until thoroughly combined.
  2. (** It may appear as if the dough is a bit on the crumbly side, but it will come together)
  3. Refrigerate the dough for 2 hours
  4. Roll the dough into balls the size of a large blueberries. I found it worked well to lightly grease my hands with coconut oil and roll the puffs in my hands instead of on the countertop
  5. When ready to roll and bake:
  6. Preheat the oven to 375
  7. Line a rimmed baking sheet with parchment paper
  8. Bake the puffs for 15 minutes
  9. Allow them to cool completely before storing in an airtight container
  10. They'll keep for about a week.
