The past few nights have been interrupted by strange tummies, for assorted reasons. Nala, my plant nibbler. Poppy, who eats everything in sight (maybe, because she's a rescue?) Me, a tummy bug that's been hanging around
Come 3 am, I find myself watching the twinkling lights of the city, flipping pillows to the cool side. This morning, I called a truce earlier than usual. Padding out to the living room as the first light appeared on the horizon. The kitties trailing on my heels, I reach for my book, as we snuggle in on the sofa

Mornings – April 2019
The good news, of course, is it finds me here typing to you.
Lately, I've found it challenging coming to this space during daylight hours. There is a new (ish) day job that's bigger than any I can remember. There are candlelight yoga and evening walks along the river. Emails, always. But for now, for this moment, all is peaceful and calm. All are comfy and settled
It is just me, right here.

A small smattering of loveliness to share
A couple of weeks ago, on a whim, I signed up for a cooking class at our local Williams and Sonoma. Part of their Cookbook Club series. It was such a fun thing to do. The featured cookbook is filled with so many colorful recipes(!) With one of the best farmers markets in the country just a few blocks from where I live; I've decided to cook through it this year (a most suitable goal if ever there was one). The strawberry yogurt cake is the clear winner so far

I'm a sucker for salads: 12 Big, Hearty Salads That Hold Their Own As Dinner
This winter, I spent a fair bit time in Minneapolis, for work. The weather was brutally cold and snowy. At the end of the day, I just couldn't muster a trip outside for something to eat. Luckily, there was a Potbelly's on the skywalk, and their chicken salad salads always hit the spot.
Chicken salad, like tuna salad, has been a staple in the fridge off and on over the years. It's easy to make, especially if you've just picked up a rotisserie chicken or two at Costco. You can use mayo, greek yogurt, sour cream in any combination. Nothing too complicated
A dash of garlic powder makes it just a little bit better. As does mustard. It tastes good the day you make it, even better the day after

Chicken Salad Salad
Ingredients
- Chicken Salad
- ½ cup greek yogurt (or mayo)
- 2 Tbsp sour cream
- 1 tsp mustard (I like to use either Dijon or honey mustard)
- 1 Tbsp lemon juice
- ½ tsp garlic powder
- salt + freshly ground black pepper
- 4 -5 cups shredded rotisserie chicken
- 1 cup chopped celery
- 1 ¼ cups seedless red grapes, halved
- Salad
- Assorted greens
- ½ cup chopped pecans
- ¼ cup chopped red onion
- ½ cup diced tomato
- ½ cup diced cucumber
- a small handful of croutons, crumbled
Instructions
- In a large bowl, add the mayo, sour cream, mustard, lemon juice, garlic powder, a pinch of salt and a grind or two of black pepper.
- Whisk to combine
- Add the chicken, celery, and grapes
- Mix gently
- Serve on a bed of greens, topped with nuts, tomato, cucumber, onions, and crumbled croutons

I will have to try making this for my parents. They have had a difficult time, and I’ve kind of become their cook. I don’t make chicken salad much, but this looks like something they would like to try out. And I know they love it. Sorry to hear you have been having an issue with your tummy. Hope things start to feel better. Love the view from your window. It’s a beautiful view. Wish I were sharing it with you. Hope you are doing well and hope to catch up with you soon.
