visit the newest addition to our family on Saturday.

It's hard to believe three months have passed by this quickly.  If he's anything like his pictures, he'll be chubby-cheeked and very snuggly.  This time he may even open his eyes(!)

The drive is three hours each way, and selfishly, I love having the time to myself to listen to podcasts and books on tape.  A few books I've been listening to lately?  Big Magic, The Gift of Imperfection, and Daring Greatly

On Sunday, I've been invited to luncheon at a new natural food store in Des Moines.  With a flagship location in Lakewood, Colorado, they're expanding their reach of natural and organic grocery stores.

I'm honored to be on the list of Iowa lifestyle and food writers that they've reached out to.  I'm excited to see the store, and can't wait to meet everyone

Wishing for you the happiest of weekends

We started feeding our dogs raw dog food over a year ago and noticed significant changes pretty quickly.  Not only were their coats shinier, but their demeanor became mellow and calm.

One change we never expected?  They turned up their noses at anything processed.

It's nearly sacrilegious at our house to go without a treat, so making our own has been a great alternative, and these are a couple of my go-to recipes

They're quick, easy to make, and can be made ahead in batches, so they're able to enjoy them for a couple of weeks.  Not only is it a money saver, but also lets me control what they're made of, and how big they are.

A note about the flour:  I use sprouted whole wheat flour as it can be easier to digest, although whole wheat pastry or spelt will work just as well

Enjoy!

xoxo

Peanut Butter and Bacon Dog Biscuits

Ingredients

  • 1 cup natural creamy peanut butter
  • ¾ cup milk (or nut milk your choice)
  • 1 large egg
  • 2 cups sprouted whole wheat flour (or whole wheat pastry or spelt flour)
  • 1 Tbsp baking powder
  • cup rolled oats (regular oats, not quick)
  • 3-4 strips cooked bacon, chopped

Instructions

  • Preheat oven to 325° F
  • Line two large baking sheets with parchment paper or silicone baking mats. Set aside.
  • In the bowl of your mixer, add the peanut butter, milk, and egg. Gently mix until combined.
  • Add the flour and baking powder and mix until combined
  • Mix in the oats and bacon (The dough will be thick and heavy)
  • If you have the time, I find the dough a little easier to work with if I've allowed it to cool in the refrigerator for a half-hour or so. If not, it's all good if you want to start rolling the dough right away
  • Using a floured rolling pin, roll or pat out dough to ½" thickness.
  • Cut with a cookie cutter (I prefer bone shaped), and place 1" apart onto the prepared cookie sheets.
  • Bake for 18-20 minutes, or until very lightly browned on the bottom.
  • Remove from the oven, and flip the treats to bake the other side for 10-12 more minutes.
  • Allow the biscuits to cool completely before serving
  • Store at room temperature or in the refrigerator for up to 1 week.
